Dutch Courage is a little “surf ‘n turf” of a sampler which pays homage to the unmistakable layout of traditional Vierlande merklappen; the crowned “G” of the Groningen alphabets; and gives a playful nod to the whales which put in an appearance nearly every year hunting for herring near Den Helder and Scheveningen. And also to the brown hares which inhabit the open fields and meadows of the Netherlands, particularly the low-lying Polders near Amsterdam and the nature reserve Het Twiske.
